Penny's Sausage Rolls

A wonderfully easy recipe from our friend Penny, using Mount Moriac Sausages.  Enjoy hot or cold, easy to freeze, and great for kids lunchboxes.

1kg Mount Moriac Sausages, mince removed from cases

1 large onion, diced

2 carrots, grated

1 zucchini, grated

1 potato, grated

Parsley, finely chopped

Puff pastry for rolls

Lightly beaten egg to brush

Separate sheets of frozen pastry to defrost.

Makes 70.

Mix all ingredients together except pastry and egg until well combined (best to use hands if you can stand it!).

Cut sheet of puff pastry in half lengthwise.

Place mince mix lengthwise down centre of pastry, approx 1/3 of piece. Roll like a Swiss roll over mix into a cylinder and pinch edges. Cut the roll in half, then each half in half again (or into desired sizes).

Brush with egg and bake on 180 for 35 to 40 min or until golden brown.
