Eliza’s Topside Roast

Mount Moriac Beef's Topside Roast is available in our Slow Cooking Box.

Take the beef out of the fridge up to 30 minutes before cooking to let it reach room temperature. Remove from cryovac, rinse and pat dry.

Place the roast in a roasting pan, cover in seeded mustard, season with pepper, and drizzle some olive oil. Pop it into the oven (fat side up if it has fat) for 5-10 minutes at 180 degrees to sear. 

Remove from the oven, cover in foil, and return to the oven, and allow for 30 minutes per 500grams.  

Once cooked, remove from the oven, cover with foil, and allow it to sit for 15 minutes, before carving and serving.  

Eliza’s tips: 

The juices in the roasting pan are delicious. I throw roast vegetables (potatoes, carrots, onion, sweet potato, pumpkin) into the bottom of the roasting dish to soak up the juices. I also use the juices to make gravy with, including any juice that runs off the roast when it is sitting, before it is served.
